A Healthier Berry Crisp for Mother’s Day

A fresh berry crisp (or crumble) is one of my all-time favorite desserts as the weather begins to warm up. Something about it just reminds me of the spring/summertime. Don’t get me wrong- I am ALL FOR enjoying a good ole dessert with all the sugar and gluten on a special occasion. I believe things like that should be enjoyed! But today I’m sharing a simple Berry Crisp recipe that has a few “healthier” twists.

Here’s how to make it:

Filling:

- 4 cups mixed frozen berries (blueberries, raspberries, strawberries, or blackberries) You can add in some fresh ones, too!

- 2 tablespoons pure maple syrup OR coconut sugar

- 2 tablespoons lemon juice

- 2 tablespoons cornstarch

Crumble Topping:

- 1 cup sprouted rolled oats

- 1/3 cup almond flour or organic all purpose flour

- 1/4 cup chopped pecans

- 1/3 cup coconut sugar or brown sugar

- 1/2 teaspoon cinnamon

- A pinch of salt

- 1/4 cup melted grass-fed butter

- 1 teaspoon vanilla extract

Instructions:

1. Preheat the Oven: Preheat your oven to 350°F (175°C). Lightly grease an 8x8-inch baking dish. P.S. Spruce up your Mother’s Day dessert with a pretty dish to celebrate mom. Here are a few I love that you can order on Amazon Prime:

2. Prep the Filling: In a large bowl, combine the mixed berries, maple syrup (or sweetener of choice), lemon juice, and cornstarch. Toss gently until the berries are well coated. Pour the berry mixture into the prepared baking dish.

3. Make the Crumble Topping: In a separate bowl, combine the rolled oats, almond flour, chopped nuts, coconut sugar, cinnamon, and salt. Pour in the melted butter and vanilla extract. Stir until the mixture becomes crumbly.

4. Put It All Together: Sprinkle the crumble topping evenly over the berry mixture in the baking dish, covering the fruit entirely.

5. Bake: Place the baking dish in the oven and bake for 30-35 minutes, or until the topping is golden brown and the fruit is bubbling.

6. Cool and Serve: Allow the crisp to cool for a few minutes before serving. Serve warm with a scoop of my homemade vanilla ice cream (sharing recipe below!)

Now… It’s no secret every good dessert needs a good vanilla ice cream to go with it ;)

Last month I shared about my new Ninja Creami I’ve been loving. When we have special occasions, I’ve loved making some homemade vanilla ice cream to go with dessert. It is absolutely delicious and not as hard as you may think. Now I’m not making any healthy shortcuts with this one y’all. Sure you can make some non-dairy ice cream and cut back on the sugar, but like I said… It’s Mother’s Day. We only get to celebrate this once a year, may as well enjoy it! ;)

Here’s how to make Homemade Vanilla Ice Cream in the Ninja Creami!

  • 1 1/2 Tbsp cream cheese (I like to use this Good Culture Probiotic Cream Cheese)

  • 1/2 cup granulated sugar

  • 1 1/2 tsp vanilla bean paste (you can use vanilla extract here, too!)

  • 1 cup + 2 Tbsp organic heavy cream

  • 1 1/2 cups whole milk (I like to use whole organic grass-fed milk)

Instructions

  • In a large microwave-safe bowl, soften the cream cheese for 10 seconds. Then add the sugar and vanilla, whisk for about 60 seconds, until mixture looks like frosting.

  • Then slowly add heavy cream and milk. Whisk until fully combined and sugar is dissolved.

  • Pour base into empty creami pint and place in freezer for 24 hours (or until fully frozen!)

  • Once base has frozen, put it in your creami and let the machine do its magic!

This is the BEST addition to your berry crisp. Something about this ice cream is so special, a perfect treat for Mother’s Day.
