The easiest high-fiber, protein-rich treat

Frozen Raspberry Greek Yogurt with Chia Seeds and Chocolate Shell

Ingredients:

- 1 cup plain unsweetened Greek yogurt

- Honey to taste

- 1/4 cup frozen raspberries (This is key! Pop fresh raspberries into the freezer if needed!)

- 1 Tbsp cup chia seeds

- 1/4 cup warm water

- 2 Tbsp Lily's dark chocolate or semi-sweet chocolate chips



How To Make It:

1. Prepare the Chia Gel:

- In a small bowl, mix the chia seeds with warm water. Stir well and let it sit for about 20 minutes until it thickens into a gel-like consistency.

2. Combine the Yogurt Mixture:

- In a medium bowl, combine the Greek yogurt, honey, and chia gel. Mix until well incorporated.

3. Add Raspberries:

- Gently fold the frozen raspberries into the yogurt mixture. Pop into the freezer for a few minutes after. I like to get it to a “soft frozen” (is that even a thing?! 😂)

4. Prepare the Chocolate Shell:

- Melt the chocolate chips. You can melt them in the microwave in 30-second intervals, stirring in between, or use a double boiler on the stove. Stir until smooth.

6. Assemble:

- Remove the frozen yogurt mix from the freezer. Quickly pour the melted chocolate over the top of the cold mixture. The cold surface will cause the chocolate to harden instantly, creating a nice little chocolate shell!

7. Serve Immediately:

- Enjoy your frozen raspberry Greek yogurt treat immediately!
