Refreshing Frozen Watermelon Dessert: Simple, Sweet, and Summery
There’s nothing like a sweet, delicious watermelon in the summer! We’ve been eating quite a lot of watermelon around here lately. Our two year old grandson Judah LOVES watermelon. He calls it “walalala” and asks for it almost everyday. I decided to try a new spin on how to enjoy watermelon and came up with this little frozen watermelon dessert! With just one ingredient and minimal prep, it’s quick, easy, and delish! (It’s even big John approved!)
Ingredients:
- 1 large watermelon
Instructions:
1. Prepare the Watermelon:
- Start by slicing your watermelon into wedges. Remove any seeds.
2. Freeze the Slices:
- Arrange the watermelon slices in a single layer on a baking sheet lined with parchment paper. Make sure the pieces are not touching so they freeze individually.
- Place the tray in the freezer and freeze for at least 4 hours, or until completely solid.
3. Grate the Frozen Watermelon:
- Once frozen, take the watermelon slices and grate them using a box grater into a bowl. The grated watermelon should have a light, snowy texture.
4. Serve Immediately:
- Spoon the grated watermelon into serving dishes or glasses and enjoy immediately for the best texture and flavor. If you want to get fancy, top with a lime wedge and a sprinkle of sea salt!
Tips for Picking the Best Watermelon:
- Look for Uniformity: Choose a watermelon that is firm, symmetrical, and free from bruises, cuts, or dents.
- Check the Field Spot: The watermelon should have a creamy yellow spot (field spot) where it rested on the ground. If the field spot is white or non-existent, the watermelon might not be ripe.
- Tap for Tone: Give it a tap; a ripe watermelon will have a deep, hollow sound. Underripe or overripe melons tend to sound dull.
- Consider the Weight: The watermelon should feel heavy for its size, indicating it's full of water and likely juicy.
Benefits of Watermelon:
- Hydration: Watermelon is made up of about 92% water, making it excellent for hydration on those hot summer days.
- Nutrient-Rich: It is a good source of vitamin C, vitamin A, and antioxidants like lycopene, which have various health benefits, including preventing cell damage.
- Digestive Aid: Due to its water and fiber content, watermelon helps promote healthy digestion.
