In a large pot over medium heat, brown some Italian Turkey Sausage. I used 4 links from @shadybrookfarms (remove the casing!!).
You could also use ground Italian Chicken Sausage!
To the pot, add:
- Half an onion, chopped.
- A handful of shredded carrots
- A 32 oz. carton of chicken broth
- A big handful of baby kale
- 1 can white beans (I used cannellini)
- 1 tsp thyme
- Salt + pepper to taste
Bring to boil, simmer and enjoy! ๐
PRO TIP: Cook the turkey sausage ahead of time, drain fat and store in fridge until youโre ready to make soup.
