Chocolate Covered Strawberry Coco Whip

- 1 container Coco Whip, frozen

- 1 cup chopped strawberries -sweeten with a little stevia if needed

- 4 tablespoons Enjoy Life Mini Chips

In a bowl: Combine frozen Coco Whip with chopped strawberries (chop it in with a sturdy spatula)

- Melt chocolate chips on low power - I start with one minute at 20% power then stir. Repeat until it's melted.

- Quickly pour the Coco Whip strawberry mixture into melted chocolate. Stir until combined. Work quickly and put mixture in individual cups or back in the Coco Whip container.

Freeze until firm and enjoy!

Renee’s Chicken and “Rice”

In a large pot add:

- 8 boneless skinless chicken thighs,

- 3 cups chicken bone broth

- 1/2 cup water

- 1/2 medium onion chopped

- 2 stalks celery cut in half, include celery leaves

- 2 bay leaves

- Fresh ginger root (thumb sized piece peeled- leave whole)

- Salt & pepper

Bring to boil and cook on simmer until chicken is tender and falling apart. Remove celery pieces, ginger & bay leaves. Shred chicken.

To Prepare Cauliflower Rice: I buy frozen bags and microwave to defrost then spread on cookie sheet with a little garlic salt and bake at 350 for about 10 minutes. It gives the cauliflower a rice texture.

To Serve: Put cauliflower rice in a bowl, top with shredded chicken, include some broth then top with fresh lime, sliced green onion and cilantro

Renee’s “Break-Fast” Bowl

In a skillet add:

- Chopped mini yellow pepper

- Chopped green onion (save the green tops for garnish)

- Spray with coconut or avocado oil and saute until soft

- Add 2 eggs, 2 egg white and scramble until done.

Transfer cooked eggs to bowl and top with 2 slices cooked & crumbled bacon or ham

For garnish:

- 1/2 avocado cut into cubes tossed in fresh lime juice

- Grape tomatoes slices

- Green onion

- Salt & pepper to taste
