3-INGREDIENT FIESTA BEEF
— 1 1/4 lbs beef cubes (salt + pepper on beef!)
— 2 cups salsa (I used homemade salsa but you can use whichever you’d like! 😊)
— 2 tablespoons avocado oil
DIRECTIONS:
1. Brown meat in pot over medium high heat
2. Reduce heat and add salsa, stir to combine
3. Cover with lid and simmer for 2-3 hours (or until tender!!)
4. Once done, shred with a fork
5. Serve over bed of cauliflower or jasmine rice, top with sautéed peppers + onions, fresh cilantro and lime juice (you can use any taco toppings you’d like!!)
BONUS TIP: This recipe would also be GREAT used as taco meat!
