Mixed Berry Chia Seed Pudding

Y’all know I’ve been eating chia seeds for years! I used to order them bulk to my house many years ago. These tiny chia seeds pack a powerful nutritious punch! They are high in fiber, a good source of calcium, iron and omega 3’s and protein. Look how pretty these are in these cute ramekins! This would be perfect to enjoy for a snack or dessert!

If you’re a macro counting buddy of mine, here’s the macro breakdown for one serving!

MACROS (Makes 6 servings!)

Calories: 121 | Fat: 7g | Carbohydrate: 12g | Protein 4g

- 2 cups vanilla unsweetened almond milk

- 1/2 cup chia seeds

- 1 1/4 cup frozen mixed berries(I use Kirkland brand with strawberries, blueberries & blackberries)

- 1 1/2 tsp vanilla extract (you could also use almond)

- 3-4 drops liquid stevia

DIRECTIONS:

- In a bowl: Whisk chia seeds with almond milk. Add vanilla, fruit and stevia. Stir to combine.

- Pour the mixture into 6 ramekins or use half mason jars with lids.

- Refrigerate until firm and set. It takes several hours or do overnight. Enjoy!
