Apple Date Bars

In a saucepan combine:⁣
1 cup chopped and peeled honey crisp apple⁣
1 cup pitted and chopped Medjool dates ⁣
1/2 cup water ⁣
1/4 tsp cinnamon ⁣

Cook on medium heat until apples soften and it becomes a paste. Take off burner and cool to room temperature. ⁣

In a bowl combine:⁣
1 cup GF oatmeal (I like Bob's Red Mill)⁣
1/2 cup gluten free flour (I like Bob's Red Mill GF flour)⁣
1/4 cup chopped pecans⁣
1/4 tsp cinnamon ⁣
1/8 tsp salt⁣
1/4 tsp baking soda⁣
4 TBL Grass Fed Butter

Mix the above ingredients until crumbly. ⁣

In a small bowl beat 1 egg with 1 tsp vanilla extract. Add egg mixture to crumb mixture, then combine cooled apple date mixture. ⁣

Pour into 8x8 pan lined with parchment paper and bake at 375 for 20-25 minutes until lightly browned around the edges. Cool and cut into 12 squares.⁣
