In a saucepan combine:
1 cup chopped and peeled honey crisp apple
1 cup pitted and chopped Medjool dates
1/2 cup water
1/4 tsp cinnamon
Cook on medium heat until apples soften and it becomes a paste. Take off burner and cool to room temperature.
In a bowl combine:
1 cup GF oatmeal (I like Bob's Red Mill)
1/2 cup gluten free flour (I like Bob's Red Mill GF flour)
1/4 cup chopped pecans
1/4 tsp cinnamon
1/8 tsp salt
1/4 tsp baking soda
4 TBL Grass Fed Butter
Mix the above ingredients until crumbly.
In a small bowl beat 1 egg with 1 tsp vanilla extract. Add egg mixture to crumb mixture, then combine cooled apple date mixture.
Pour into 8x8 pan lined with parchment paper and bake at 375 for 20-25 minutes until lightly browned around the edges. Cool and cut into 12 squares.
